Mornings can be rough for me. Like a lot of working mothers one thing that helps my crazy morning is preparing mini quiche cups for an easy, on-the-go meal.
I first started making quiche when I fell in love with a certain coffeeshops' recipe. I did not love the price tag though;spending $5 a day on quiche seemed ridiculous, frivolous and unnecessary. So I set out through the wild west of the internet in search of the perfect broccoli cheddar quiche recipe. What I found was there are a myriad of ways to make a quiche but I am going to let you in on the secret to successfully creating delicious quiche cups that your family and friends will love you for!
For this dish you will need a standard muffin tin, a large bowl and mixer. Mixing with a fork or whisk will also work but you won't get the same fluffy texture. In this recipe we are using broccoli and cheddar cheese but you can add whatever ingredients you like! The beauty of quiche is that you can be creative and customize your meals with different seasoning, meats, veggies and cheeses!
2 sheets of store bought puff pastry (This makes it sooo easy)
6 large eggs
6 egg whites
1/4 cup milk
1/4 cup water
1 1/2 cups broccoli
1 cup shredded cheddar cheese (save some or add more for the top)
1 tsp salt
1 tsp pepper
1 tsp paprika (optional)
In big bowl mix eggs, egg whites, milk, and water. Add broccoli and cheese and mix. Add salt pepper and paprika.
Spray muffin tin with nonstick cooking oil.
Lay puff pastry out and with a cup or glass, cut out 12 circles of pastry. Place 1 puff pastry round on bottom of muffin tin cups. Ladle in egg mixture and sprinkle with more cheese on top!
Bake at 375 for 25-30 minutes or until you see that the eggs have risen slightly and cheese is turing golden brown. If you're unsure if they are done cooking, you can always use the toothpick trick! If toothpick comes out clean they are finished! After they have had a chance to cool take them out of the muffin pan and place in your desired method for travel. I usually put two in a to-go bag at a time.
